Jeremy Fox
Chef Jeremy Fox certainly chose a path less taken when he opened Ubuntu in 2007, the first modern vegetable-driven restaurant of its kind. His cooking philosophy was never one of shunning meat, but rather a celebration of using local ingredients in their entirety. Currently, Fox has been commissioned by Phaidon Press to create not only a beautiful book, but one of the most influential books about vegetables ever published. Titled Seed to Stalk, the book will include a collection of visual and literary explorations into the cuisine that has made Jeremy Fox one of the world’s foremost authorities on modern vegetable cookery.
