James Peisker is Co-Founder of Porter Road Butcher in Nashville, TN. James is a St. Louis, MO native who earned his bachelor’s degree at The Culinary Institute of America in New York. He learned the craft of whole-animal butchery while spending time as Sous Chef at Niche back in his home town of St. Louis, MO. He entered the world of restaurant business management as opening Executive Sous Chef of Taste and Brasserie, also part of the Craft Restaurant Group. James moved to Nashville, TN in 2010 and in 2011 he co-founded the first Porter Road Butcher with his new friend and current business partner, Chris Carter. Chris and James also own Porter Road Butcher Meat Company, a processing facility and wholesale business located in Princeton, Kentucky.
