In her role as Beverage Director for AC Restaurants, Cappie is instrumental in shaping the experience of guests through the wine, beer and cocktails that accompany chef Ashley Christensen’s menus at Poole’s Diner, Beasley’s Chicken & Honey, Chuck’s Burgers, Fox Liquor Bar, and Death & Taxes. Cappie’s passion for hospitality started early, inspiring her to study for a bachelor’s degree in hotel, restaurant, and tourism management at the University of South Carolina. There, the Greensboro, N.C., native realized her passion for wine, in particular. After graduating, she continued her education through a Certified Sommelier program at the Professional Culinary Institute. She passed her certification through the Court of Master Sommeliers in December 2009, and joined the team at Charleston’s McCrady’s restaurant in March 2010, initially working as a server while she trained under Sommelier Clint Sloan. In 2013, her studies paid off when she reached the advanced level, making her the youngest Advanced Sommelier in Charleston. Shortly after passing her exam, she was named an Eater Young Gun semi-finalist, solidifying her as one of the most promising up-and-coming talents in the restaurant industry. She continued to rise through the ranks at Neighborhood Dining Group, landing the role of Director of Beverage and Education for the entire group, including McCrady’s and both locations of Husk and Minero. Eager to continue her education and career with a new challenge, she relocated to Raleigh, North Carolina in 2017 to join the team at AC Restaurants as Beverage Director.
