As a Philadelphia native with South American influence from his wife and partner, Chef Ernest Hines dazzles his staff and patrons with unique fusions of taste and color. Chef Ernest began his career in 1990 at the Airport-Marriott Hotel and Soho Vallarie Restaurant in the Philadelphia Theater District. Since then, he worked as an Executive chef at different companies, gaining experience as entrepreneur and leading special events and large gatherings. Throughout his career, Chef Ernie has been guest chef at TV and social media shows, giving tips and grilling techniques and sharing his cuisine concept. Since 2017, Chef Ernie owns Spice the Americas Food Truck & Catering in Metro Atlanta. Starting his services at Sweet Water Brewing Co. and Colony Square lunches in midtown, he has now participated in festivals and concerts, as well as corporate services, weddings and family catering events. Chef Ernie is experienced in a range of catering services, with or without the food truck, and specializes in a wide variety of food themes, with his most focus on South, Central & North American cuisine.
