Chef Paul Martin's culinary journey began in Texas at the renowned four-star La Mansion Del Rio, where he built a strong foundation in Latin and French cuisines. His passion for seasonal ingredients and innovative menu creation flourished with a move to Portland, Oregon. There, he immersed himself in the farm-to-table movement, enhancing his expertise in using the freshest local products.
Relocating to Philadelphia marked a pivotal point in Chef Paul's career, exposing him to a diverse array of cuisines including modern Cuban, Italian, and Japanese. This rich tapestry of culinary influences honed his skills and broadened his culinary perspective.
In 2019, Chef Paul moved to Atlanta with his family, where he has since held esteemed positions at Barcelona Wine Bar, King + Duke, Southern Gentleman, and Ecco Buckhead. His commitment to culinary excellence and his creative approach to cooking have now led him to The Americano, helmed by celebrity chef Scott Conant, where he continues to delight guests with his talent.
